Eyes of Cappadocia, Uchisar – A Boutique Cave Hotel with Panoramic Views

Arguably Cappadocia’s finest address, Uchisar sits at the highest point in the region, commanding uninterrupted views across Pigeon Valley towards Mount Erciyes. This is the Cappadocia people imagine before they arrive – a landscape of sculpted rock, vast skies and hot air balloons rising gently at sunrise. At Eyes of Cappadocia, the terrace is perfectly positioned for alfresco breakfasts and offers one of the best vantage points in the region — a place to take in the spectacle of the balloons as they rise across the valley, best enjoyed at a leisurely pace as the day begins to unfold.

Eyes of Cappadocia is a boutique cave hotel in Uchisar, Cappadocia, positioned in a quiet corner of the village just a short stroll from its centre. From here, you can walk out each evening to some of the region’s most characterful restaurants – many set within caves themselves – where refined Anatolian cuisine is served alongside excellent local wines. In winter, fires are lit and it is deeply atmospheric; in summer, terraces open out for long, relaxed dinners under a canopy of stars,

The hotel itself is carved directly into the rock, with just eight rooms, giving it an intimate and highly personal feel. Each suite is individually designed, shaped by the natural structure of the cave, with arched ceilings, textured stone walls and a design language rooted firmly in the region. The styling is quintessentially Anatolian – honest, characterful and in keeping with its surroundings – offering an authentic cave hotel experience in Cappadocia that feels both grounded and comfortable.

Beyond the hotel, there are endless opportunities to explore and experience Cappadocia properly. Walking trails begin nearby, including routes through Pigeon Valley, while the surrounding area offers, ballooning experiences, horse riding, pottery workshops, carpet ateliers and local markets. The region is as much about culture as it is about landscape – from centuries-old winemaking traditions to a cuisine deeply rooted in Anatolian heritage.

Service here is a defining strength. Ahmet and his father Metin run the hotel with care, consistency and genuine warmth, supported by a small team who take pride in what they do. Guests are looked after attentively, without formality, by people who know both the property and the region intimately and are always on hand to assist with recommendations.

This is also a hotel we know exceptionally well. Our Product Manager, Holly, has returned here on three separate occasions – independently of work – drawn back by its setting and its atmosphere. Visiting in winter, she experienced Cappadocia at its most evocative: snow settled across the valleys, fires lit within the cave rooms, and evenings spent enjoying local Turasan wines. It is this consistency across seasons that gives the hotel its strength.

Breakfast is a highlight of any stay. Served daily to your table, it is a generous Turkish spread of local cheeses, olives, preserves, honey, freshly prepared hot dishes and eggs – all thoughtfully presented and designed to be enjoyed at a leisurely pace. It is, without exception, one of the most memorable parts of the experience.

The hotel is approximately one hour by road from Nevsehir Airport, and slightly further from Kayseri, making it an accessible yet quietly positioned base within the region.

Families are warmly welcomed, though as with many cave properties, there are uneven surfaces, steps and natural variations within the structure. A degree of care is advised, particularly with younger children.

Eyes of Cappadocia will appeal to travellers who value setting, authenticity and experience. With just eight rooms, a remarkable vantage point and genuinely attentive hospitality, it offers a considered and highly individual way to experience Cappadocia – one that feels both grounded and memorable.
