What sets this hotel apart for us is personal experience. Our Product Manager, Holly, has stayed here three times – independently of work – returning for its atmosphere, its reliability, and the way it delivers in every season.

Elevated above the surrounding valleys, the landscape unfolds like a living, breathing fairytale – a hillside of cave dwellings, stone houses and boutique hotels carved directly into the rock. It is also home to some of the finest restaurants in Cappadocia, attracting a well-heeled domestic and international crowd and offering confident, regionally rooted Anatolian cuisine.
From a dining perspective, it is one of the strongest areas in Cappadocia – more akin to Kalkan than a typical tourist hub. Restaurants here are thoughtful, often cave-set, and reflect the diversity of Turkish cuisine, which varies significantly across the country. In winter, fires are lit and the atmosphere is deeply inviting; in summer, terraces open out for long, unhurried evenings.

Cappadocia is often associated with summer, but it is a destination where each season offers something distinct.
Spring brings clarity to the landscape and ideal conditions for walking, with trails beginning close to the hotel and leading through Pigeon Valley.
Summer is defined by early starts and long evenings – terrace breakfasts with balloon-filled skies, followed by relaxed dinners in Uchisar’s cave restaurants.
Autumn introduces a slower pace, with warm light across the valleys and a natural focus on the region’s wines and harvest season.
Winter, however, is when the experience becomes most distinctive. Snow settles across the valleys, sound is softened, and the landscape takes on an almost complete stillness. The cave rooms come into their own, with fires lit and a more intimate, enclosed atmosphere.
On one visit, after a morning at Turasan Winery – one of the region’s most established producers – Holly returned with a bottle of their Seneler Öküzgözü–Boğazkere, a local red wine of real character. The hotel team prepared a generous board of local cheeses, breads and nuts, lit the fire, and left everything to be enjoyed in the warmth of the cave room while snow settled outside. It is this level of thoughtful, unprompted service that defines the hotel.
While the hotel serves breakfast only, the team are always willing to go out of their way to prepare simple dishes or assist with anything needed to make your stay more comfortable.
Experiencing Cappadocia Properly
Cappadocia rewards those who take the time to explore it.
From Eyes of Cappadocia, walking routes begin close to the hotel, including trails through Pigeon Valley leading towards Göreme’s Lovers Hill viewpoint. From here, the scale of the landscape becomes clear before descending into Göreme itself.
There are also opportunities for horse riding across the valleys, visits to pottery workshops and carpet ateliers, and time spent in nearby towns such as Ürgüp. Here, restaurants such as Ziggy’s showcase a selection of mezes and regional dishes designed for sharing – an excellent way to experience the breadth of Anatolian flavours in one sitting.
And of course, the balloon flight remains the defining experience. The early start – often around 4am – is part of it, but entirely justified once airborne, offering a perspective that reshapes your understanding of the region.
Where to Eat in Uchisar
One of the advantages of staying here is the ability to dine well each evening without overplanning.
Sira is a standout – warm, well-run, and confidently rooted in Anatolian cuisine. It’s the kind of place where you encounter dishes not commonly found elsewhere in Turkey. One such example is Sira Köfte, sometimes referred to as a “bride’s meal” – a large, carefully prepared köfte filled with mushrooms and yellow cheese, served with a grape-based reduction. It is both distinctive and reflective of the region’s culinary depth.
Elsewhere, cave restaurants throughout Uchisar offer equally atmospheric settings, particularly in winter when fires are lit and the stone interiors come into their own.
Why We Chose Eyes of Cappadocia
This is not a hotel that competes on scale. It doesn’t need to.
With just eight suites, it offers something more focused – a genuinely personal experience, run by Ahmet and his father Metin, who are present, engaged, and consistent in their approach. Service is natural and attentive, without unnecessary formality.
It also sits at a more accessible price point than Cappadocia’s landmark properties such as Argos and Museum Hotel. For guests considering options such as Argos, but seeking something smaller and more intimate, Eyes of Cappadocia is a compelling alternative – without compromising on location or views.
